Le Tiramisu à Julie
By Lionel Mann, February 1st, 2007Guaranteed to knock your socks off, this is the best Tiramisu on the planet. It was a hit at our friend’s birthday party in Sommieres and we are forever grateful. Try it, I bet you’ll like it.
3 eggs
100 g sugar
500 g mascarpone
1 lemon
150 ml strong coffee
3 tbsp marsala wine (any fortified wine)
250 g lady fingers
2 tbsp cocoa
Separate the whites from the egg yokes. Put the yokes and the sugar in a mixing bowl. Whip with an handmixer at high-speed until the mixture has become quite white. Add the mascarpone in the bowl, by spoonfuls. Beat the white until they are firm and delicately fold them into the mix. Finely grate the lemon zest and add to the mixture. Only grate the yellow skin.
In a separate small bowl, mix the cold coffee with the marsala. Dip or soak half the quantity of lady fingers in the coffee mixture and place them at the bottom of a deep and large pan. Cover with half the mascarpone mixture. Dip or soak the rest of the lady fingers, place them in the pan over the mascarpone, and finish with a last layer of mascarpone, even and smooth.
Refrigerate the tiramisu for a minimum of 4 hours. Just before serving, powder the top with sifted cocoa.
